What existed before, and what actually changed
Before efficient distillation, aromatic plants were mostly stuck inside the plant. You had three options. Burn the material and smell the smoke. Steep it in fat or oil and use the carrier. Or press it, which works for citrus peel and almost nothing else.
All three have the same limitation: you never get the smell on its own. You get the smell attached to something heavy, in a form that spoils, in a concentration set by whatever the carrier will hold.
Distillation solves that. Heat plant material with water, let the aromatic compounds rise with the steam, cool the vapour, and collect a liquid that separates into an oil and a scented water. What you now hold is the smell, extracted, portable, storable and blendable in a way nothing before it allowed.
Three specific improvements matter from this period.
Better apparatus. The alembic, with a cooling head and a spout for collecting condensate, was developed and refined into equipment that could be run repeatedly with predictable results. The name itself, al-anbiq, is Arabic.
Better understanding of the process. Separating what came over first from what came later, running repeated distillations, and controlling heat rather than simply applying it.
Written method. This is the part historians care about most. Recipes, quantities and procedures were written down in a form other practitioners could follow, which is the difference between a craft and a technology.
Al-Kindi and the first perfume manual
Al-Kindi, working in ninth century Baghdad, was a philosopher and polymath, and among a very long list of works he produced a book on the chemistry of perfume and distillations. It survives, and it is remarkable for how practical it is.
It contains recipes for scented oils, waters and substitutes, with instructions on methods and equipment. It includes formulas for imitating expensive materials with cheaper ones, which tells you two things at once: that a serious luxury market existed, and that people were already trying to get the effect of it for less. Ibn Sina, known in Europe as Avicenna, is the name most often attached to the steam distillation of rose. The standard story says he was the first to extract rose essential oil this way, and that the technique spread from his work.
It is worth being careful here, because the standard story has been repeated so often that it has hardened. Historians of chemistry generally credit him with significant refinement of distillation and its medical applications rather than with sole invention, and earlier work in the same tradition clearly fed into it. The safest and still remarkable version is this: in this period, in this intellectual world, the distillation of rose moved from something possible to something reliable, and rose oil and rose water became products with a real supply chain. How it reached Europe
Transmission happened through the usual routes: Al-Andalus in the Iberian peninsula, Sicily, the trading republics of Italy, and the movement of people and books in both directions during and after the Crusades.
Europe imported the equipment, the method and the vocabulary. Alembic, alcohol, alkali and elixir all arrived in European languages from Arabic. What Europe then did with distillation, over several centuries, was apply it to everything: medicine, spirits and eventually the alcohol-based perfumery that defines the Western tradition.
